As for WP Ecommerce, you can just go grab a copy of it here:
Plug it into a test site and play around with it.
For Shopp, you can probably contact Jonathan and see if he has a demo store up that you could log into and look around.
Delivery was okay, but the content was kind of lacking for me. I wasn't so interested in the implementation examples as I was what the plugin interfaces actually looked like and the internals of the plugins. But that's just me.
